Mexicali Vegan 

  • Avocado, hearts of palm, black beans, tortilla chips, jalapeno with romaine and mesclun lettuce (360 calories with no dressing) 

    • Avocado is a good source of vitamin K, vitamin B, and good fat, but be aware that too much can be too fattening & high in calories 

    • Jalapenos provide antioxidants in addition to vitamins C and E

Tips for Building your own Salad 

  1. Mix or have kale as your base (100 calories)

    • Kale is low in calorie and is high in fiber, iron & Vitamin K

  2. Pack your salad with veggies 

    • Vegetables provide essential vitamins, minerals, and fiber

  3. Add a source of protein to your salad

    • Chicken is a good source of lean protein

    • Black beans are a good non-animal based source of protein

  4. Pick a "spa" dressing for reduced calories

    • Spa balsamic vinaigrette has 20 calories per serving, compared to the regular balsamic vinaigrette which has 140 calories

  5. Limit the cheese

    • Cheese in moderation can be part of a healthy diet

      • Skip it to or ask for light cheese reduce additional calories and fat
