Chocolate Protein Pudding Cupcake

Ingredients:

5 egg whites
-
1/2 cup chocolate flavored casein protein powder
-
1/8 cup cocoa powder
-
1/2 cup plain 2% Greek yogurt
Instructions:
-
Pre heat the oven at 300°F.
-
Mix all ingredients together.
-
Distribute the mixture over 6 silicone cupcake molds.
-
Bake for 20 minutes.
-
Serve while warm. Enjoy!

Pomogranate Swirl Popsicle

Ingredients:

8 oz pomegranate juice
-
1/2 cup plain 2% Greek yogurt
Instructions:

Fill two-thirds of each ice-pop mold with pomegranate juice.

Add enough yogurt to fill the molds to the top, about 2 tablespoons per mold.
-
Slide a knife or chopstick into each mold and swirl until a pattern forms.
-
Insert sticks and freeze for about 8 hours. Enjoy!

Cheesecake Stuffed Strawberries

Ingredients:

1 1/2 pints fresh strawberries (~28 berries)

1 8 oz. package low-fat cream cheese, softened

1 tsp. vanilla extract or lemon juice (I used a little of both)1/2 cup confectioners sugar
Instructions:
-
In a medium bowl, beat the softened cream cheese, vanilla and sugar in a bowl until fluffy.

Place the filling in a pastry bag fitted with a star tip (optional). Set aside.

Take the strawberries and with a paring knife, cut an X from the tip of the strawberry almost all the way through.
-
Gently push the tip of the pastry bag in the middle, pipe in the filling, and serve. Enjoy!
