Turkey Chili



Ingredients:

  • 2 lbs 99% fat-free ground turkey

  • 1 yellow onion, chopped

  • 5 cloves garlic, minced

  • 1 Tbsp olive oil

  • 1 (28 oz) can crushed tomatoes, no-salt added

  • 1 (15 oz) can petite diced tomatoes, no-salt added

  • 3 Tbsp tomato paste

  • 1/2 tsp. hot sauce  

  • 1 (15 oz) can kidney beans, no-salt added, drained and rinsed

  • 1 red bell pepper, chopped

  • 1 green bell pepper, chopped

  • 2 jalapenos, chopped

  • 1 1/2 tsp. sea salt

  • Pinch of pepper

  • 1 packet Stevia 3 Tbsp chili powder

  • 2 tsp. oregano

  • 1/8 tsp. cayenne pepper

 

Instructions:

  1. Drizzle olive oil in a large pot.

  2. Saute onion and garlic until fragrant, about 3 minutes.

  3. Add ground turkey and cook until crumbled and brown, draining excess liquid as necessary.

  4. Add all the rest of the ingredients and cook on medium/low heat for about an hour. Enjoy!

Better-than-Chipotle Bowl



Ingredients:

  • 1 onion, chopped

  • 1 garlic clove, chopped

  • 1 Tbsp lime zest

  • 3 Tbsp lime juice (about one lime)

  • 1/4 tsp. sea salt

  • 4 Roma tomatoes, chopped

  • 1 cup orange, red, yellow bell pepper, chopped

  • 1 jalapeno, seeded and diced

  • 1 cup black beans

  • 1 cup corn

  • 1/2 cup cilantro, roughly chopped

  • 2 tsp. olive oil

 

Instructions:

  1. In a large bowl, combine all ingredients and stir well. Allow flavors to marinate for about 2 hours then serve. Enjoy!

Tuna Spinach Bites

Ingredients:

  • 1 can light tuna in water

  • 1/4 cup celery, chopped

  • 1/4 cup red onion, chopped

  • 1/4 cup broccoli florets

  • 2 tbsp light mayonnaise

  • 1 tsp red wine vinegar

  • fresh pepper

  • fresh spinach

 

Instructions:

  1. ​Drain tuna.

  2. Mix all the ingredients.

  3. Serve in freshly washed spinach leaves. Enjoy!
